These chocolates are a treat you can feel good about eating and or sharing with loved ones. They are vegan and gluten free, they contain nuts and are sweetened with whole food sweeteners like dates. They come together quick and make a good amount, perfect for sharing!

Crunchy Chocolate Truffles (2 Ways!)
Ingredients
1 cup almonds
1 cup vegan semi-sweet chocolate chips
1 Tbsp. coconut oil
8 dates, pitted
1/2 cup raw pecans
1 cup shredded coconut, unsweetened
2 tsp. vanilla
3 tbsp. maple syrup
2-3 Tbsp. almond milk
Options 1: 5 drops orange essential oil or Option 2: 4 drops peppermint essential oil

Directions:
Place nuts in food processor and process until a flour is created (but not too long or you will have nut butter). Next add dates, and process again. Add, coconut, vanilla, maple syrup and almond milk and desired essential oil, process. You want mixture to be able to stick together when you roll it up. Next roll mixture into small balls (truffles). Stick truffles in the freezer while you melt the chocolate. Add chocolate and coconut oil to a double broiler and melt, stirring often so you don’t burn the chocolate. Take truffles out of freezer and roll them around in the chocolate, use a fork and remove them from the chocolate and place back into the freezer for at least 2 hours to harden. Enjoy truffles but make sure you store extras in the freezer or the chocolate will start to melt.
