My kids love Rice Krispy treats, we have been avoiding pre-packaged foods for a long time in my home and luckily there are a lot of healthier recipes for homemade gluten free rice Krispy treats available. However sometimes I like to avoid marshmallows and make them a little heathier by adding protein and some fruit. These are my latest invention and they turned pretty cute, I think these would be a perfect thing to serve at a BBQ or Birthday party.

Strawberry Vanilla Rice Krispy Balls Ingredients:

4 Cups gluten free crispy brown rice cereal
1 ¼ cup almond butter
1 cup brown rice syrup
½ Tbsp. vanilla bean powder
1 cup freeze dried strawberries

Directions:
In a medium size sauce pan over medium heat, add almond butter and brown rice syrup and heat until melted, stirring constantly or it mixture will burn. Once melted remove from heat and add vanilla, stir well. Then add cereal and strawberries, stir to mix up. Place mixture in a glass baking dish and pat down, allow to cool for 2 minutes. Then roll cereal into tight balls. Store in an air tight container on the counter.
